If I don't open a gingerbread house box how long will the ingredients last? I will be opening the box on December 21 and I don't know how many days in advance I should buy it.

 Gingerbread lasts a VERY long time

You shouldn't need to worry about a few weeks. Most gingerbread house kits last about a year. The gingerbread itself could last much longer but I've found that the candies can start to go bad (or melt together) after about a year depending, of course, on the candies used.
