Modifying Premade Gingerbread House Kits

Is it possible to cut the panels of a kit to make a different shaped building? If so, what is a reliable technique to do so without breaking the pieces. I assume you would need to soften them somehow or use a "saw" type tool if working on hardened pieces.

(As a side note, we are prohibited from combining kits or making our own gingerbread for this project.)
