I generally throw them away after a year, but it's good to check if the box has an expiration date listed too. Usually, the icing and candies will go bad before the gingerbread.

I'm no expert, but I think a kit would last for many years, as long as the gingerbread is in its original, sealed package. If it has been opened I'd try to vacuum sealing. I'm assuming you'll use the house for decorative purposes, as it may taste stale next year.
