how far in advance can you bake gingerbread before using it

We are having our homeschool christmas party and plan on all of the children making gingerbread houses. I will be baking all of the gingerbread pieces to be assembled and was wondering how far in advance I can bake them. I have to make about 25 houses and that doesn't allow for me to bake them the night before. Thank you!

Gingerbread house forms

Thank you, your suggestions were very helpful in making the houses for Christmas, a week before Christmas. I will be making 12 house forms. So after cooling I will wrap them in celafane. Do I put them in the refrig. or leave them out? My grandkids will be decorating these houses on Christmas Day.

25 houses

Last month I made 25 houses for a group of cub scouts and baking 200 pieces of gingerbread took me a week. I didn't bake all day each day, but to try not to stress out with it, I baked all the sides one day, the the fronts another....etc. It helps to stay a little organized. If this is for Christmas, I would start the first week of December.
