how do you make 3 dimensional people out of gingerbread dough?

I want to make 3 dimensional people out of gingerbread dough, basically using gingerbread like play dough. Do you have any suggestions on temperature , stiffness of dough or time in oven?

May need other edible doughs instead

Gingerbread just doesn't work like playdough since it needs to be cooked. You CAN make 3D gingerbread cookies, but they're essentially 2D cookies that hook together after baking to make them stand up. An example is my gingerbread reindeer cookies:

If you want to make people that look more realistic, such as you would do with playdough, then you'll want to use something like gum paste or marzipan. See our edible clays page for more options:
