gingerbread men

I make gingerbread men for charity sales at Christmas. I make them early December and have always kept them in a tin, I always use the same recipe. Last year they all broke apart when I was taking them out of the tin and I had nothing to sell. Can you tell me where I went wrong please? Thanks
