do I have to put the ginger bread house in the fridge the night I made it or can it stay out all night?

There's no need to refrigerate a finished house. Gingerbread is quite durable and long-lasting once baked. Just store it in a cool, dry place if you want it to last a while and, of course, protected from bugs if you plan to eat it.
