It really depends on who you're buying them from and what the kit contains. Gingerbread itself generally lasts a LONG time, but the icing and candies don't tend to hold up as well.

I think this is a question for whoever's selling you the kit. Unfortunately, we do not sell kits from this site. I was never able to find a bakery who valued customer service enough to put my name behind. So I just sell gingerbread templates now.
