Freezing house parts

I am having a Gingerbread House Decorating Party, and I would like to start this week and freeze the flat parts. I am afraid to wait till the day before to try to bake enough pieces for all guests.
When I thaw the pieces, will they remain firm or will the be too soft?

Frozen Gingerbread

I've frozen already-baked gingerbread cookies several times and they've thawed out just fine.

Let them sit

I'm not sure how the dough will react to freezing and thawing. If I were you, I would bake the pieces and just let them sit out for a couple of days. My gingerbread pieces last just fine with this method. I keep them on cooling racks in a temperate room with low moisture. The dough sits out and is fine. If they DO happen to get too soft, you can always put them back in the oven at a low temp to dry them out.
