Can you use a rolling machine

Hi just wondering if it is possible to use a rolling machine or sheeter on gingerbread? If so what sort please

I don't believe a sheeter or pasta roller machine will work with gingerbread. The dough is far too wet, even the stiffest doughs. I'd suggest using rolling rails. These are spacer bars that you buy in pairs of various thickness. 1/4" works great for gingerbread. You'll use these rails on either side of your dough as you roll it out and since the rolling pin rides on the rails an even thickness is assured. Hope this helps.
