Baking gingerbread men in advance

Hello, I am a member of a Lions Club in Spain, and we have a carol service every year. We offer shortbread, mince pies and gingerbread men. Last year I made 200 gingerbread men the week before the event, and kept them in tins. On the night they all fell to pieces as people were picking them up. After all my work (and the expense) it was very disappointing. I am about to start again for this years concert, is there a tried and true recipe I can use without worrying please? Thank you |
