How long in advance can you make a gingerbread house before Christmas?

 It depends......

I have made my gingerbread houses 2 months before Christmas, if they are for show. If you plan on eating them, I would say a couple of weeks in advance. Always, keep them in a cool, dark room....away from heat and bright lights. (BTW, I'm in Tennessee, too.)
